St. Christopher’s Fairtrade Coconut Cake

50g Fairtrade dessicated coconut
Quarter pint of milk
100g margerine
225g Fairtrade sugar
2eggs
225g S.R. flour
Pinch of salt

Method
Soak the coconut in the milk for two hours.
Cream the margarine.
Beat in the eggs.
Fold in the flour and salt.
Mix in soaked coconut.
Put in lined loaf tin.
Bake at gas mark 4 for 45- 60 mins.


Fairtrade Christmas Cake

200g Fairtrade Currants
200g Fairtrade Sultanas
200g Fairtrade Raisins

50g glace cherries
50g blanched Almonds
50g mixed peel
1 lemon or orange
200g plain flour
50g ground almonds
150g Fairtrade soft brown sugar
4 eggs
1 tbsp treacle
Brandy


Fairtrade Apricot Oatmeal Muffins

170g rolled oats
110g plain flour
45g Fairtrade granulated sugar
1 tbsp baking powder
1/2 tsp salt
3/4 cup milk
125g puree
1 egg
1/4 cup oil
1tsp vanilla
55g Fairtrade apricots, chopped
45g Fairtrade raisins

Method
Measure first five ingredients and put into a large bowl, mix well.
Mix milk and apricot puree, egg, oil and vanilla in another bowl.
Add wet ingredients to the dry and stir until just moistened.
Fold in the Apricots and raisins.
Fill greased muffin cups 2/3 full.
Bake at 350F/180C for 15-20 mins


Fairtrade Carrot Cake

1cup Fairtrade sugar
2 cups flour
1 tsp salt
1 tsp cinnamon
1 cup Fairtrade brown sugar
1 tsp baking powder
1 tsp baking soda
3 cups finely shredded carrots
11/2 cups vegetable oil
2 tsps vanilla
4 large eggs
½ cup of Fairtrade nuts (any type)
½ cup Fairtrade raisins

Method
Grease and flour a 13"x 9" cake tin.
Stir together dry ingredients.
Add the carrots, oil and vanilla.
Beat for 2-3 mins untill well mixed.
Stir in the nuts and raisins.
Bake at 325° for about 50-60 mins.
Cool on a wire rack
Cream cheese frosting
3 oz. Cream cheese
¼ cup butter
1 tsp. Vanilla
11/2 cups of Fairtrade castor sugar
Mix all the ingredients together and ice cake.
